Ingredients

125g dark chocolate 70%

125g butter

150g caster sugar

50g Christmas pudding

3 large eggs

35g plain flour

Recipe

  1. Melt butter slowly over a low heat in a pan. Once melted remove from the heat and add the chocolate.

  2. Whisk eggs and sugar together until well combined, then add the flour.

  3. Stir both mixtures together and crumble in the Christmas pudding.

  4. Pour into buttered moulds, preferably small pudding basins. Bake at 190ºC for 10-12 minutes, making sure centre is still runny.

  5. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy.

Defrost your frozen portions in the fridge and use within 24 hours, or in a microwave on 'defrost' directly before use.
